It’s early, with nary a drop of coffee in my system, but I thought I’d share the following on this lovely St. Patrick’s Day:
A drink: Clover Margarita (Courtesy of Mother’s Run Bar in NYC)
- 2 Ounces Herradura Silver Tequila
- .75 Ounces Lime Juice
- .75 Ounces Simple Syrup
- 4 Slices Cucumber
- 6-8 Mint Leaves
Gently crush cucumber and mint leaves with the back of a spoon. Add ice and the remaining ingredients. Shake until cold. Serve same way as any other margarita. YUM!
A sweet treat: Mint Chocolate Cookie Sandwich (Recipe from Lauren Lilling)
- 1/2 Cup Unsalted Butter
- 2 Cups Powdered Sugar
- 50 Chocolate or Mini Chocolate Wafer Cookies
- 12 Ounces Semi Sweet Chocolate
- Green Sprinkles
Line a baking sheet with wax paper. Mix butter until it’s light and creamy. Add powdered sugar and creme de menthe and mix until it’s fluffy. Put the sandwiches together. Place in freezer for one hour. Melt chocolate in microwave. Dip half a cookie in chocolate and add sprinkles if desired. Keep in refrigerator. Serve at room temperature. Yum. Yum!
Joke: A rabbi and an Irish priest collide in an automobile accident. They get out of their cars, and both stumble to the side of the road. The rabbi says: “What a mess!” The priest replies with “Are you all right?”
The priest then pulls out a flask from his coat and offers a drink to the rabbi to calm his nerves. The rabbi takes the flask and drinks all of it.
“What are we going to tell the police?” he says. The priest says, “Well, I don’t know what you’re going to tell them now, but I’m going to tell them I wasn’t the one drinking tonight.”
